I love love love an oven baked egg. They’re saucy, dippy and packed with flavor. Traditionally they have a runny yolk, but if you are someone who prefers a medium or even hard egg I think they’re an even better use case as the rich sauces keep the whole dish dippy and creamy no matter how you prefer your eggs.

I am always tempted when I see them on a menu but I love them even more for at home consumption for their amped up flavor with minimal effort. With a little prep (I’m talking 30 minutes) ahead of time, you can keep your sauce in the fridge all week and have these eggs at a moment’s notice.

Fennel & Celery Root Baked Eggs

If you haven’t used celery root in cooking before this is a great way to start. It’s got incredible, unique flavor and is as easy to cook with as a potato. These eggs are so creamy and delicious but they’re full of hidden veggies - another plus. Of all five versions, these are my number one favorite. Bonus! We ate the leftover puree warmed up with steak and potatoes the other day and it was so good I may replicate just for the purpose of steak.

Smoked Eggplant & Roasted Tomatoes

This is on the more complicated side in terms of prep, but still very easy. It may have many components compared to the others but that doesn’t make it hard. My favorite part is the smokey flavor shines through and the lime zest brightens up the entire dish to another level.

Herby Eggs En Cocotte

This is probably the simplest of the dishes to come together. I tested it with a medium egg and the cream content made it delicious as can be. If you like a hard egg, I’d start here. This is a traditional eggs en cocotte dish topped with an herb packed sauce. This one was by far Sathya’s favorite.
