You may think of potatoes when you think of Irish food - and you wouldn’t be wrong to do so - but not a lot of people realize hearty greens are a big part of Irish cuisine. I love a great green and if that doesn’t get your mouth watering, I’d argue you haven’t had them cooked the right way yet (like smothered in mashed potatoes).
Colcannon is an Irish classic, a phenomenal way to sneak in greens to your kids plate and also a perfect use for leftover mashed potatoes. If you’re looking for an easy way to bring a little Ireland to your plate on Monday or just something other than Corned Beef to try - this is for you! You can make fresh mashed potatoes but my favorite is to use leftover or store bought as it’s a fantastic way to make both easy options more exciting.
