Celery Root Mushroom Soup

A soup born of my husband and my love of celery root, my everlasting commitment to mushrooms, and the belief that every good soup has some cold butter thrown into the blender.
I had a different idea for this soup but when I went to make it, I couldn’t get sesame oil and mirin out of my head. Add a little ginger and you’ve got a really dynamic flavor profile different from your average blended veggie soup.
We’re fighting back to back to back to back to back viruses in this house (two a month since September to be specific) and soup is a recurring guest star in our home these days. If you’re also in the same boat, I urge you to give this delicious recipe a shot.
This recipe is built around the ease of grabbing one, eight oz container of whatever pre sliced mushrooms are at your local grocer (because again, sick household) but you can use literally any mushroom and to be honest, you can up the quantity to your heart’s desire. More will just lean the flavor toward more mushroom but it won’t diminish the delicious.
Now off to go find an exact paint color match for this soup because I think I need my walls to be cremini cream? Shoutout to my IG follower who gave it the perfect Pantone name.
