This isn’t the first time I’ve given you a wing recipe, but it’s surely the best time I’ve given you one.

I’ve long been a fan of oven baked wings at home. They’re something of a marvel how crispy they can get without a vat of oil involved. I’ve given you my recipe for this before and I stand by it, particularly if you are focused on high protein goals that are also delicious.

But if you’re looking for the best wing you have truly ever had. The juiciest, crispiest, most loaded with flavor before you even get any sauce involved: look no further. Meet this hybrid wing: part oven baked at a low temp, part deep fried and all dry brined. It’s perfection and one of my proudest culinary achievements and deepest regular cravings.
