You know when you make the mistake of being too fun as a parent and then you get stuck having to repeat your actions over and over for eternity? We accidentally got our 4 year old addicted to vanilla steamers at home this way. Every morning we were unable to enjoy a cappuccino without the cutest little voice not so cutely shouting for “special coffee! special coffee!” I suddenly found myself making fresh vanilla bean syrup using my precious stash of vanilla beans straight from Sathya’s home state in India every couple weeks.
One morning I was short on vanilla syrup while mid prepping a bunch of melons for the kids. I paused to split open a bean and get the - should be controlled substance - cooking then turned back to my melons. Too rushed to clean up the board or my knife, I coated the melons in fresh vanilla beans and MY OH MY was it fantastic. I knew immediately I wanted to make it an intentional dish.
We have since instated a rule of vanilla steamers only on weekends but not without coming across the happiest fruity accident turned recipe for your hot holiday weekend.
